
McCormack Wines 2023 Cabernet Sauvignon
The Cabernet Sauvignon grapes are grown in Legana, the West Tamar Valley. The Vines are some 30 years old, producing just 1 ton of grapes, which are handpicked almost as the leaves are falling off the vine in the last month of Autumn. This late picking is intended to achieve good seed ripeness of the berries.
The Cabernet Sauvignon grapes were destemmed and fermented in open vats before being transferred into two French oak barrels aged 3 and 4 years. The result is a dark-coloured, medium-bodied wine displaying aromatics of dark cherry, blackcurrant, and slight vanilla undertones from the oak. This cool-climate Cabernet Sauvignon currently presents as a light-bodied, easy-drinking wine, but will develop in complexity and body over many years to come.
